Ingredients
2 ea 2 russet potatoes, peeled
2 ea 2 egg yolks
1.5 tbsp 1.5 butter
1 tsp 1 garlic powder
1 tsp 1 salt
3 tspb 3 whipping cream
1 tspb 1 bacon fat
Directions
- Boil the potatoes until tender, then strain them.
- You can either push them through a ricer or put them in a big mixing bowl with all the ingredients except the bacon fat.
- Mix thoroughly. If they are too dry, add more whipping cream.
- Transfer into piping bag and pipe into the shape you want onto a cookie sheet lined with parchment.
- Bake at 400 until the surface is lightly golden, approximately 12-14 minutes.
- Gently...brush potatoes with bacon fat.
Notes
- Depending on what you are serving these with, they would be good with your favorite cheese mixed in.
