I had never made these, but they were easy and tasty. You can make them ahead of time, then bake them before serving.

Ingredients

  • 2 ea 2 russet potatoes, peeled

  • 2 ea 2 egg yolks

  • 1.5 tbsp 1.5 butter

  • 1 tsp 1 garlic powder

  • 1 tsp 1 salt

  • 3 tspb 3 whipping cream

  • 1 tspb 1 bacon fat

Directions

  • Boil the potatoes until tender, then strain them.
  • You can either push them through a ricer or put them in a big mixing bowl with all the ingredients except the bacon fat.
  • Mix thoroughly. If they are too dry, add more whipping cream.
  • Transfer into piping bag and pipe into the shape you want onto a cookie sheet lined with parchment.
  • Bake at 400 until the surface is lightly golden, approximately 12-14 minutes.
  • Gently...brush potatoes with bacon fat.

Notes

  • Depending on what you are serving these with, they would be good with your favorite cheese mixed in.
