Jalapeño Stuffed Chicken

Ingredients
2 ea 2 Large chicken breasts
2 cups 2 Panko bread crumbs
2 tbsp 2 granulated garlic
2 tbsp 2 Sea salt
2 tbsp 2 Black pepper
2 cups 2 Heavy cream
2 ea 2 Eggs
6 ea 6 Bacon strips
- Cream Cheese Filling
1 block 1 Cream cheese
1/2 cup 1/2 Parmesan cheese
2 ea 2 Jalapeño's, diced, seeds removed
1 ea 1 Garlic clove, diced
Directions
- Preheat oven to 375 degrees.
- Cream Cheese Jalapeño Filling
- Dice the Jalapeño's. The seeds control the heat. Add/Decrease/Remove the seeds according to your heat tolerance. I ALWAYS wear kitchen gloves when handling Jalapeño's. They can save a lot of tears.
- Dice the garlic clove.
- In a small bowl, add the cream cheese, parmesan cheese, garlic and Jalapeño's. Mix thoroughly.
- Panko Crumbs
- Add Panko and spices together in a bowl. Mix thoroughly.
- Add heavy cream and eggs in separate bowl. Wisk until blended.
- Chicken Prep
- Wash the chicken breasts. Remove any excess skin.
- Along the thickest part of the breast, slice it lengthwise, making a pocket. Set aside.
- Dip chicken breast in cream mixture. Cover thoroughly.
- Drag chicken through Panko crumbs. Cover thoroughly.
- Stuff the cream cheese mixture in the pocket of the chicken breast.
- Sprinkle remaining Jalapeño's and garlic on top.
- Wrap chicken in 3 slices of bacon. Secure with a wooden toothpick.
- I like to put my chicken in a roasting pan with a grate so they have circulation all the way around them. This gives an even crispness to the bacon all the way around.
- Place in middle rack of oven. Bake for approximately 25 minutes. With a food thermometer, check the internal temperature of the chicken. Remove chicken from oven at 160 degrees and let rest for 10 minutes.
- Plate and enjoy!
